Orange polenta cake GF/DF


  • 1 large orange
  • 4 large eggs
  • 150g polenta
  • 100g ground almonds
  • 125g coconut sugar, xylitol
  • 2 tsp gluten free baking powder
  • 100ml olive oil


Wash the orange and put into a pan cover with boiling water and simmer for 1 hour until very soft.  Drain, then on a board cut into chunks discarding any pips.  Put into a food processor and process until finely chopped.

Pre heat 180c /160 c fan.  Grease and line a loaf tin with baking paper.

Measure all the dry ingredients into a bowl and stir together.

Add the eggs to the processor with the oil and whizz for quickly, then add the dry ingredients and fold together.

Turn into the tin and bake 45mins.

Remove onto a rack and cool.

Serve with berries, and greek natural yoghurt.
