French Vanilla Ice-cream GF/DF

Delicious served with berries/mango or other seasonal fruits.

Bonus Points: Non acidic, anti inflammatory treat!  Almonds and cashews provide vital minerals and essential fats, none of the trans fats found in regular ice cream and refined sugars!


  • 700ml Almond Milk
  • 200g soaked cashew nuts, soak in water for 4 hours
  • 300g coconut nectar, manuka honey or maple syrup
  • 1 vanilla pod
  • 1 tsp psylium husk (gives it its thickness)
  • pinch good mineral salt


1. Blend all ingredients in a blender until smooth.

2. Place in ice cream maker for up to an hour, keep in freezer for 2-3 weeks.
