The beauty of this base is it is fast to make, made all in a one bowl, it makes great snack options for kiddies. Coconut flour is low GI, great for fibre and gluten free!
- 2 eggs
- 2 tbsp coconut flour
- 2 tbsp plain yogurt, I use greek to increase calcium availability
- 1/2 tsp garlic powder
1/2 tsp onion power
- 1/2 tsp oregano dried
1/2 tsp dried basil, add more herbs to taste
- 4 tbsp parmesan/option to use goats cheese grated if better tolerated
- Mineral salt to taste
Beat the egg then stir in the coconut flour until well mixed, add in herbs and salt with the cheese.
Make as small rounds or larger if wanting to use as a pizza base.
Spoon mixture onto parchment paper and bake at 180C for 10mins or until golden.
Serve with tapenade, tomato paste, pesto, chopped olives, tomatoes fresh basil, sprinkled feta chopped smoked salmon or clean ham/chicken. Or turn into a pizza!
